Description

A cozy one-skillet meal made with juicy chicken, tangy pepperoncini peppers, and a creamy parmesan-garlic sauce. This Flavorful Creamy Pepperoncini Chicken Skillet is perfect for weeknights and reheats beautifully. It pairs well with mashed potatoes, rice, or crusty bread for a complete comfort meal.


Ingredients

1.5 lbs boneless skinless chicken thighs or breasts

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons olive oil or butter

3 cloves garlic, minced

1/2 cup chicken broth

3/4 cup heavy cream

1/2 cup grated parmesan cheese

3/4 cup sliced pepperoncini peppers

2 tablespoons chopped parsley (optional)


Instructions

1. Pat the chicken dry with paper towels and season both sides with salt and pepper.

2. Heat a cast iron or heavy skillet over medium-high heat and add olive oil or butter.

3. Sear the chicken for 4–5 minutes per side until golden and nearly cooked through. Remove from skillet and set aside.

4. Reduce heat to medium-low. Add minced garlic to the skillet and sauté for 30 seconds until fragrant.

5. Pour in chicken broth and scrape up the brown bits from the bottom of the skillet.

6. Stir in heavy cream and parmesan cheese. Let the sauce simmer for 3–5 minutes until slightly thickened.

7. Return the chicken to the skillet and add the sliced pepperoncini. Simmer for another 4–6 minutes until the chicken is fully cooked and the sauce is bubbly.

8. Garnish with chopped parsley and serve warm.

Notes

Use chicken thighs for richer flavor and juicier results, but breasts also work if preferred.

Don’t skip deglazing the pan—those browned bits add incredible depth to the sauce.

If the sauce thickens too much upon reheating, add a splash of broth or cream to bring it back to life.
