Description

These Firecracker Chicken Skewers are a spicy, sweet, and savory hit fresh off the grill. Juicy chicken pieces are marinated in a bold sauce, grilled to perfection, and topped with sesame seeds and fresh herbs. They’re easy enough for a weeknight and impressive enough for guests.


Ingredients

1.5 lbs boneless, skinless chicken thighs or breasts, cut into chunks

1/4 cup soy sauce

2 tablespoons brown sugar

2 tablespoons sriracha (adjust to taste)

2 cloves garlic, minced

1 teaspoon grated fresh ginger

1 tablespoon rice vinegar

1 tablespoon sesame oil

Wooden or metal skewers

Sesame seeds and chopped cilantro, for garnish


Instructions

  1. In a large bowl, whisk together soy sauce, brown sugar, sriracha, garlic, ginger, rice vinegar, and sesame oil.
  2. Add chicken chunks and toss to coat. Cover and refrigerate for at least 1 hour.
  3. If using wooden skewers, soak them in water for 30 minutes.
  4. Thread marinated chicken onto skewers.
  5. Preheat grill or grill pan over medium-high heat and lightly oil the surface.
  6. Cook skewers for 10–12 minutes, turning every few minutes, until chicken is cooked through and slightly charred.
  7. Sprinkle with sesame seeds and cilantro. Serve hot.
