Ingredients
1½ cups graham cracker crumbs
6 tablespoons unsalted butter, melted
16 ounces cream cheese, softened
2/3 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
½ cup sour cream
½ cup lemon curd (homemade or store-bought)
Instructions
- Preheat oven to 325°F (160°C). Line an 8×8-inch pan with parchment paper.
- Combine graham cracker crumbs and melted butter. Press into pan to form crust. Bake 10 minutes; let cool.
- Beat cream cheese until smooth. Add sugar, then eggs one at a time, mixing well.
- Stir in vanilla and sour cream until smooth and creamy.
- Pour filling over crust. Dot top with lemon curd and swirl gently.
- Bake for 35–40 minutes, until center is just set.
- Cool to room temperature, then chill for at least 4 hours.
- Slice and serve chilled.
