Description
A vibrant and elegant French salad combining roasted beets, creamy avocado, tangy creme fraiche, crunchy pistachios, and soft-boiled eggs. Perfect as a brunch centerpiece, dinner starter, or light lunch.
Ingredients
3 medium roasted beets
1 large ripe avocado
2 soft-boiled eggs
3 tablespoons creme fraiche
3 tablespoons chopped pistachios
4 radishes
3 cups baby greens or arugula
2 tablespoons chopped almonds (optional)
½ grapefruit or orange (segmented)
2 tablespoons chopped parsley or chives
1 tablespoon olive oil
Flaky salt and black pepper to taste
Instructions
1. Peel and slice the cooked beets; thinly slice the radishes; cut the avocado into wedges; chop pistachios and almonds.
2. Bring a saucepan of water to a gentle boil, add eggs, and cook for 6-7 minutes. Transfer to an ice bath, peel, and halve.
3. In a small bowl, mix creme fraiche with herbs, salt, and pepper.
4. On a platter, layer greens, beets, radishes, avocado, and citrus. Dot with creme fraiche, sprinkle nuts, and place egg halves.
5. Drizzle with olive oil, season with flaky salt, and serve immediately.
Notes
Use golden beets for a sweeter, milder flavor and striking color variation.
Prepare the eggs and beets in advance to speed up assembly on busy days.
Slice avocado right before serving and toss with citrus to prevent browning.
