This quick and delicious Egg Fried Rice features fluffy cold rice, tender scrambled eggs, and colorful vegetables all stir-fried with savory soy sauce and sesame oil. It’s perfect as a light main or a tasty side dish.
Ingredients
3 cups cooked cold rice (preferably day-old)
3 large eggs
1/2 cup green peas (frozen or fresh)
1/3 cup finely diced carrots
2 tablespoons light soy sauce
1 teaspoon sesame oil
2 tablespoons vegetable oil (for frying)
1 clove garlic, minced (optional)
Instructions
- Beat the eggs in a bowl and set aside.
- Heat 1 tablespoon oil in a skillet over medium-high heat. Scramble the eggs until just set, then remove from pan.
- Add remaining oil and sauté carrots for 2-3 minutes. Add peas and cook 1 minute more. Stir in garlic if using.
- Add rice to the pan, breaking up clumps. Stir-fry with vegetables.
- Return eggs to the pan and pour in soy sauce. Stir everything to combine well.
- Finish with a drizzle of sesame oil. Stir, then serve hot.
