Ingredients
8 large eggs
1/4 cup milk or cream
1/2 teaspoon salt

1 pound breakfast sausage
1 cup shredded cheddar cheese
1/2 cup salsa
6 to 8 large flour tortillas
2 tablespoons chopped parsley or green onion (optional)
Instructions
1. In a skillet over medium heat, cook breakfast sausage until browned and crumbled. Drain excess fat and set aside to cool slightly.
2. Crack eggs into a bowl, add milk or cream, salt, and pepper. Whisk until smooth.
3. Cook the eggs in a nonstick skillet over medium-low heat until just set and creamy. Remove from heat.
4. In a large bowl, mix scrambled eggs, cooked sausage, shredded cheese, salsa, and optional herbs until well combined.
5. Lay out the tortillas. Place about 1/2 cup of filling in the center of each. Fold in the sides and roll tightly from the bottom up.
6. Wrap each burrito in parchment paper or foil. Place on a baking sheet and freeze for 1 hour.
7. Transfer frozen burritos to a freezer-safe bag or container.
8. Reheat in microwave for 2 to 3 minutes or toast in a skillet until warmed through and golden on the outside.
