Ingredients
1 cup unsalted butter, softened
1 cup brown sugar
1/2 cup granulated sugar
1 large egg
2 teaspoons vanilla extract
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon pumpkin pie spice or cinnamon
1 cup semi-sweet chocolate chips
1/2 cup chopped pecans
1/2 cup chopped walnuts
1/2 cup white chocolate chips (optional)
1/2 cup dried cranberries (optional)
Instructions
1. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
2. Beat in the egg and vanilla extract until smooth.
3. In a separate bowl, whisk together the flour, baking soda, salt, and pumpkin pie spice.
4. Gradually add the dry ingredients into the wet mixture, mixing just until combined. Do not overmix.
5. Fold in chocolate chips, pecans, walnuts, and optional white chocolate or cranberries.
6. Scoop dough into balls and place on a parchment-lined baking sheet, spaced about 2 inches apart.
7. Bake at 350°F (175°C) for 10–12 minutes or until edges are lightly golden.
8. Let cool on the baking sheet for 2 minutes, then transfer to a wire rack.
9. Serve warm or allow to cool fully before storing in an airtight container.
