Ingredients
2 ripe mangoes, diced
1 cup cucumber, diced
1/4 cup red onion, finely chopped
1 small jalapeño, minced (seeds removed for less heat)
1/4 cup fresh cilantro, chopped
2 tablespoons lime juice
1/4 teaspoon salt
Instructions
1. Peel and dice the mangoes into small, even cubes. Place them in a mixing bowl.
2. Dice the cucumber and red onion finely. Add to the bowl with the mango.
3. Mince the jalapeño (removing seeds for a milder taste) and add it to the mix.
4. Chop fresh cilantro and add it to the bowl.
5. Pour in the lime juice and sprinkle in the salt.
6. Gently stir the mixture with a spoon or spatula until well combined. Chill for 10–15 minutes before serving.
Notes
Always use ripe mangoes for best flavor—Ataulfo or Kent mangoes are ideal.
