Description

Ingredients

1 ½ cups warm water

2 ¼ teaspoons active dry yeast

1 tablespoon brown sugar

1 teaspoon salt

4 cups all-purpose flour

⅔ cup baking soda

4 tablespoons unsalted butter, melted

Coarse sea salt or pretzel salt


Instructions

1. Combine warm water, brown sugar, and yeast in a mixing bowl. Let sit for 5 minutes until foamy.

2. Add salt and flour gradually, stirring until a dough forms. Knead for 5–7 minutes by hand or using a dough hook until smooth.

3. Place the dough in a greased bowl, cover, and let rise in a warm area for 1 hour, or until doubled.

4. Punch down the dough, divide into 4–6 equal pieces, roll each into ropes, and cut into 1-inch bites.

5. Bring a large pot of water to a boil and add the baking soda. Boil pretzel bites in batches for 20–30 seconds. Remove with a slotted spoon.

6. Arrange boiled bites on parchment-lined baking sheets, sprinkle with coarse salt.

7. Bake at 425°F (220°C) for 12–15 minutes or until golden brown.

8. Brush with melted butter immediately after baking. Serve warm.

Notes

Make sure the water is warm, not hot (105–110°F), or it may kill the yeast.

Don’t skip the baking soda bath—it gives that classic chewy crust and color.

For a sweet version, toss baked bites in cinnamon sugar instead of salting.
