Ingredients
1/4 cup prime rib drippings
2 cups beef broth
1 tablespoon Worcestershire sauce
2 tablespoons red wine or 1 tablespoon balsamic vinegar
2 cloves garlic, minced
1 teaspoon fresh thyme or rosemary
1/4 teaspoon salt (adjust to taste)
1/4 teaspoon black pepper
Instructions
1. Transfer cooked prime rib to a platter and place the roasting pan over medium heat.
2. Pour in red wine or balsamic vinegar and whisk to deglaze the pan, scraping up the browned bits.
3. Add beef broth, Worcestershire sauce, garlic, and herbs to the pan.
4. Bring to a simmer and let reduce for about 10 minutes.
5. Season with salt and pepper to taste.
6. Strain the sauce through a fine-mesh strainer into a saucepan or bowl.
7. Serve warm over sliced prime rib or as a dipping sauce.
Notes
For a stronger herb flavor, simmer the herbs in the sauce for the full reduction time, then strain.
If your drippings have a lot of fat, skim some off before starting the sauce.
