Easy One Pot Chicken Parmesan Pasta

Description

A one-pot wonder that brings together tender chicken, flavorful marinara, and melty cheese for a pasta night that’s hearty and easy. This comforting dish comes together quickly and satisfies with every gooey, garlicky bite.


Ingredients

2 boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons olive oil

Salt and freshly ground black pepper, to taste

2 cloves garlic, minced

3 cups marinara sauce

3 cups water or low-sodium chicken broth

12 oz penne or rotini pasta (uncooked)

1 1/2 cups shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Fresh basil leaves, for garnish


Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Season chicken pieces with salt and pepper; sear until browned (5-7 minutes). Remove and set aside.
  3. In the same pot, add minced garlic and sauté until fragrant (30 seconds).
  4. Pour in marinara sauce and water (or broth). Stir well.
  5. Add pasta and ensure it is mostly submerged.
  6. Bring to a boil, then reduce to simmer. Cover and cook for 10-12 minutes, stirring occasionally.
  7. Return chicken to the pot. Stir and top with mozzarella and Parmesan.
  8. Cover and let cheese melt for a few minutes.
  9. Garnish with fresh basil and serve hot.
