Ingredients
2 chicken breasts
1 bunch asparagus, trimmed
3 tablespoons butter
3 cloves garlic, minced
1 lemon, juice and zest
0.5 cup chicken broth
2 tablespoons fresh parsley, chopped
Salt, to taste
Pepper, to taste
1 tablespoon olive oil
Instructions
1. Season chicken breasts with salt and pepper.
2. Heat olive oil in skillet over medium-high heat; sear chicken 4-5 minutes per side until golden. Remove and set aside.
3. Lower heat to medium, melt butter, and sauté minced garlic 30 seconds.
4. Pour in chicken broth, add lemon juice and zest, simmer 2-3 minutes.
5. Add asparagus, toss in sauce, cook 3-4 minutes until tender-crisp.
6. Return chicken to skillet, spoon sauce over, heat through 2-3 minutes.
7. Sprinkle with fresh parsley and serve with extra lemon slices.
