This Easy Khachapuri brings the iconic Georgian cheese bread into your kitchen without the need for hard-to-find ingredients or complicated steps. It’s a golden, boat-shaped bread filled with a mix of melty mozzarella and tangy feta, crowned with a just-set egg yolk for the ultimate indulgence.
Ingredients
2 ¼ cups all-purpose flour
¾ cup warm milk
1 ½ teaspoons active dry yeast
1 tablespoon sugar
½ teaspoon salt
2 tablespoons melted butter
2 large eggs (1 for dough, 1 for filling)
1 ½ cups shredded mozzarella cheese
¾ cup crumbled feta cheese
Olive oil or 1 egg for brushing the crust
Instructions
- In a large bowl, combine warm milk, sugar, and yeast. Let sit until foamy (5–10 minutes).
- Add melted butter, salt, 1 egg, and flour. Mix and knead until smooth (about 8 minutes).
- Let the dough rise in a greased bowl, covered, for 1 hour or until doubled in size.
- Preheat oven to 450°F (230°C). Mix mozzarella and feta in a bowl.
- Divide dough into 2 or 4 pieces. Roll into ovals and shape into boats by rolling and pinching the long sides.
- Place on parchment-lined sheet and fill centers with cheese mixture.
- Bake 12–14 minutes until golden and bubbling.
- Remove, make a well in the cheese, and crack an egg into each.
- Return to oven for 3–5 minutes until the egg white is set and yolk is runny.
- Brush crust with olive oil or egg wash. Serve immediately.
