  • Author: Julia Koch
  • Total Time: 2 minute
  • Yield: 2 large or 4 small Khachapuri

Description

This Easy Khachapuri brings the iconic Georgian cheese bread into your kitchen without the need for hard-to-find ingredients or complicated steps. It’s a golden, boat-shaped bread filled with a mix of melty mozzarella and tangy feta, crowned with a just-set egg yolk for the ultimate indulgence.

Ingredients

2 ¼ cups all-purpose flour

¾ cup warm milk

1 ½ teaspoons active dry yeast

1 tablespoon sugar

½ teaspoon salt

2 tablespoons melted butter

2 large eggs (1 for dough, 1 for filling)

1 ½ cups shredded mozzarella cheese

¾ cup crumbled feta cheese

Olive oil or 1 egg for brushing the crust

Instructions

  1. In a large bowl, combine warm milk, sugar, and yeast. Let sit until foamy (5–10 minutes).
  2. Add melted butter, salt, 1 egg, and flour. Mix and knead until smooth (about 8 minutes).
  3. Let the dough rise in a greased bowl, covered, for 1 hour or until doubled in size.
  4. Preheat oven to 450°F (230°C). Mix mozzarella and feta in a bowl.
  5. Divide dough into 2 or 4 pieces. Roll into ovals and shape into boats by rolling and pinching the long sides.
  6. Place on parchment-lined sheet and fill centers with cheese mixture.
  7. Bake 12–14 minutes until golden and bubbling.
  8. Remove, make a well in the cheese, and crack an egg into each.
  9. Return to oven for 3–5 minutes until the egg white is set and yolk is runny.
  10. Brush crust with olive oil or egg wash. Serve immediately.
