Description

Easy Jello Meringue Cookies are vibrant, airy bites of sweetness with a fruity twist thanks to flavored gelatin. Ingredients

3 large egg whites

1/4 teaspoon cream of tartar

3/4 cup granulated sugar

3 tablespoons flavored Jello powder (any flavor of choice)

1/2 teaspoon vanilla extract (optional)


Instructions

1. Preheat the oven to 200°F (93°C) and line a baking sheet with parchment paper.

2. In a clean glass or metal mixing bowl, beat the egg whites on medium speed until frothy.

3. Add cream of tartar and continue beating, gradually increasing speed to high.

4. Slowly add sugar, one tablespoon at a time, and beat until stiff, glossy peaks form.

5. Sprinkle the Jello powder over the meringue and gently fold it in using a spatula until fully combined.

6. Spoon or pipe small mounds onto the prepared baking sheet.

7. Bake for 1 hour, then turn off the oven and let the cookies sit inside for an additional hour to dry completely.

8. Remove and store in an airtight container once fully cooled.

Notes

Use only grease-free utensils and bowls to ensure the egg whites whip properly.

Avoid making meringues on humid days as moisture can prevent them from drying fully.

Store in airtight containers with a silica packet if needed to retain crispness longer.
