Ingredients

2 cups cooked or 1 can (15 oz) chickpeas

2 tablespoons extra virgin olive oil

1 medium yellow onion, finely chopped

2 garlic cloves, minced

1 bay leaf

1 small carrot, diced (optional)

4 cups water (or vegetable broth)

1 tablespoon lemon juice (freshly squeezed)

salt, to taste

black pepper, to taste

2 tablespoons fresh parsley or dill, chopped (for garnish)


Instructions

1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent.

2. Add minced garlic and cook until fragrant, about 30 seconds.

3. Stir in chickpeas, bay leaf, diced carrot (if using), salt, and pepper.

4. Pour in enough water to cover the chickpeas by about 1 inch (around 4 cups). Bring to a gentle boil.

5. Reduce heat to low and simmer uncovered for 45–60 minutes until the flavors deepen and broth thickens slightly.

6. Turn off the heat, stir in lemon juice, and adjust seasoning to taste.

7. Serve hot, garnished with fresh parsley or dill and an extra drizzle of olive oil if desired.

Notes

For deeper flavor, use homemade vegetable broth instead of water.

If using dried chickpeas, soak overnight and simmer for up to 90 minutes.

This soup thickens as it sits—add a splash of water or broth when reheating.
