Description
This creamy Velveeta chicken tortellini brings together tender seared chicken, pillowy cheese tortellini, and a luscious garlic mozzarella sauce in just one pot. It’s quick enough for weeknights and cozy enough for gatherings.
Ingredients
1 lb chicken breast
9 oz cheese tortellini
1 ½ cups Velveeta cheese, cubed
1 cup shredded mozzarella cheese
1 cup heavy cream
3 cloves garlic, minced
2 tbsp butter
1 tbsp chopped parsley (fresh or dried)
Salt and pepper to taste
Instructions
1. Season chicken breast with salt and pepper. In a large nonstick skillet, sear on medium-high heat until cooked through. Remove and slice.
2. In the same skillet, melt butter over medium heat. Add minced garlic and cook for 1 minute until fragrant.
3. Pour in the heavy cream and stir in Velveeta cubes. Simmer on low, stirring until melted and smooth. Add mozzarella and stir to blend.
4. Add tortellini to the sauce, cover, and simmer for 6–7 minutes until tender. Stir occasionally to avoid sticking.
5. Return sliced chicken to the skillet, mix gently, and sprinkle parsley over the top. Taste and adjust seasoning if needed.
6. Serve hot. Optional: broil for 1–2 minutes to achieve a golden cheese top.
Notes
Use freshly grated mozzarella for better melting and smoother texture in the sauce.
If sauce thickens too much while cooling, add a splash of cream when reheating.
Don’t skip broiling if you love a golden cheese crust—it adds a flavorful finish.
