Description

This Easy Creamed Spinach recipe is a rich, velvety side dish that comes together quickly with just a few pantry staples. It’s the perfect balance of creamy indulgence and wholesome greens — ideal for weeknight dinners or elegant holiday meals.


Ingredients

2 tablespoons butter

2 cloves garlic, minced

2 tablespoons all-purpose flour

1 cup milk or heavy cream

2 ounces cream cheese

⅓ cup grated parmesan cheese

10 ounces fresh spinach or thawed frozen spinach

⅛ teaspoon ground nutmeg (optional)

to taste salt

to taste black pepper


Instructions

1. Melt butter in a large skillet over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.

2. Sprinkle in flour and whisk constantly to form a roux. Cook for 1 minute to eliminate the raw flour taste.

3. Slowly pour in the milk or cream, whisking until smooth and slightly thickened, about 2–3 minutes.

4. Stir in the cream cheese and parmesan until melted and the sauce becomes smooth and velvety.

5. Add spinach in batches if fresh (or all at once if using frozen, drained spinach), stirring until fully combined and heated through.

6. Season with salt, pepper, and nutmeg if using. Let simmer for 1–2 more minutes before serving warm.

Notes

If using frozen spinach, be sure to squeeze it dry thoroughly to avoid watering down the sauce.

For extra richness, use heavy cream instead of milk.

Add sautéed onions or mushrooms for a flavorful twist.
