Ingredients

2 cups all-purpose flour

1 cup granulated sugar

1 cup brown sugar (divided, for batter and cinnamon layer)

1 cup unsalted butter (softened, divided)

2 large eggs

1 cup sour cream

1 tablespoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 tablespoon ground cinnamon

1/2 cup powdered sugar (optional, for glaze)

1 tablespoon milk (optional, for glaze)


Instructions

1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.

2. In a small bowl, combine 1/2 cup brown sugar with cinnamon for the filling; set aside.

3. In another bowl, make the crumb topping: mix 1 cup flour, 1/2 cup brown sugar, 1/2 teaspoon cinnamon, and cut in 1/2 cup cold butter until crumbly. Chill.

4. In a large bowl, cream together remaining 1/2 cup butter and granulated sugar until fluffy.

5. Add eggs one at a time, then stir in sour cream and vanilla.

6. In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Gradually mix into the wet ingredients.

7. Spread half the batter in the pan, sprinkle the cinnamon-sugar layer, then top with the remaining batter.

8. Sprinkle chilled crumb topping evenly on top.

9. Bake for 35–40 minutes or until a toothpick comes out clean. Cool for 15 minutes before transferring to a wire rack.

10. Optional: Mix powdered sugar and milk to drizzle glaze on top.

Notes

Chill the crumb topping before baking to keep it from sinking into the batter.

Do not overmix the batter; it keeps the cake tender and fluffy.
