This easy recipe brings together tender Cajun-seasoned chicken, perfectly cooked pasta, fresh broccoli, and a luscious homemade Alfredo sauce that’s both rich and satisfying.


Ingredients

2 boneless, skinless chicken breasts

1 tablespoon Cajun seasoning (more to taste)

1 tablespoon olive oil

8 oz fettuccine pasta

2 cups broccoli florets

2 tablespoons butter

3 garlic cloves, minced

1 1/2 cups heavy cream

1 cup grated Parmesan cheese

Salt and black pepper, to taste

Optional: red pepper flakes, chopped parsley for garnish


Instructions

  1. Bring a large pot of salted water to a boil. Cook fettuccine according to package instructions. Add broccoli florets to the pasta water during the last 3 minutes of cooking. Drain and set aside.
  2. Season both sides of chicken breasts with Cajun seasoning.
  3. Heat olive oil in a large skillet over medium heat. Add chicken and cook 5-6 minutes per side, or until golden and cooked through. Remove and slice.
  4. In the same skillet, melt butter. Add minced garlic and sauté for 30 seconds until fragrant.
  5. Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese, and cook until sauce thickens slightly. Season with salt, pepper, and extra Cajun spice if desired.
  6. Add the cooked pasta and broccoli to the skillet and toss to coat in the sauce.
  7. Top with sliced chicken and garnish with red pepper flakes or parsley.
  8. Serve hot and enjoy!
