Description

Ingredients

2 cups all-purpose flour

1/2 cup granulated sugar

2 teaspoons baking powder

1 1/2 teaspoons ground cinnamon

1/4 teaspoon salt

1 cup milk

1 large egg

1/4 cup melted butter

1 teaspoon vanilla extract

1 1/2 cups peeled and diced apples

1/4 cup brown sugar (for topping)

1/2 teaspoon cinnamon (for topping)


Instructions

1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners and lightly spray with nonstick spray.

2. In a medium bowl, whisk together flour, granulated sugar, baking powder, cinnamon, and salt.

3. In a separate large bowl, whisk milk, egg, melted butter, and vanilla until smooth.

4. Add dry ingredients to wet and fold together with a spatula until just combined.

5. Gently fold in the diced apples.

6. Spoon batter into muffin liners, filling each about 3/4 full.

7. Mix brown sugar and cinnamon for the topping and sprinkle over muffins.

8. Bake for 20–22 minutes or until a toothpick inserted in the center comes out clean.

9. Let cool 5 minutes in the pan, then transfer to a wire rack to cool completely.

Notes

For best texture, use firm apples like Honeycrisp or Granny Smith.

Do not overmix the batter—lumps are okay and help avoid dense muffins.

Let the muffins cool on a rack to keep the bottoms from getting soggy.
