Description

These Dill Pickle Chicken Skewers are marinated in tangy pickle juice, garlic, and dill for the ultimate savory-sour balance. Grilled to juicy perfection, they’re a hit at BBQs, picnics, or as a quick weeknight dinner. Serve them with dipping sauces or wrap them in a pita for a fun twist.


Ingredients

2 large boneless, skinless chicken breasts

1 cup dill pickle juice

2 cloves garlic, minced

2 tablespoons fresh dill, chopped

1 tablespoon olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

12 dill pickle slices

6 wooden skewers, soaked in water


Instructions

  1. Cut the chicken into bite-sized chunks.
  2. In a bowl, mix pickle juice, garlic, dill, olive oil, salt, and pepper. Add chicken and marinate at least 1 hour.
  3. Soak wooden skewers in water for 30 minutes.
  4. Thread chicken and pickle slices onto skewers.
  5. Preheat grill to medium-high and oil the grates.
  6. Grill skewers 10-12 minutes, turning occasionally, until chicken is cooked through (165°F).
  7. Let rest 5 minutes before serving.
