Ingredients
2 large boneless, skinless chicken breasts
1 cup dill pickle juice
2 cloves garlic, minced
2 tablespoons fresh dill, chopped
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
12 dill pickle slices
6 wooden skewers, soaked in water
Instructions
- Cut the chicken into bite-sized chunks.
- In a bowl, mix pickle juice, garlic, dill, olive oil, salt, and pepper. Add chicken and marinate at least 1 hour.
- Soak wooden skewers in water for 30 minutes.
- Thread chicken and pickle slices onto skewers.
- Preheat grill to medium-high and oil the grates.
- Grill skewers 10-12 minutes, turning occasionally, until chicken is cooked through (165°F).
- Let rest 5 minutes before serving.
