Description

This Delightful Honeycrisp Broccoli Salad is a fresh, crunchy blend of raw broccoli, sweet Honeycrisp apples, toasted walnuts, and tangy feta, all tossed in a light Greek yogurt dressing. Ingredients

2 cups broccoli florets

1 Honeycrisp apple, thinly sliced

1/4 cup red onion, thinly sliced

1/3 cup dried cranberries

1/3 cup toasted walnuts

1/4 cup crumbled feta cheese

1/2 cup Greek yogurt

1 tablespoon apple cider vinegar

1 tablespoon honey

1 teaspoon Dijon mustard

1/4 teaspoon salt

1/8 teaspoon black pepper


Instructions

1. Rinse and dry the broccoli, then chop it into bite-sized florets.

2. Slice the apple and red onion thinly for even texture and bite.

3. Toast the walnuts in a dry skillet over medium heat until fragrant, about 3–5 minutes. Set aside.

4. In a small bowl, whisk together the Greek yogurt, apple cider vinegar, honey, Dijon mustard, salt, and pepper.

5. In a large bowl, combine the broccoli, apples, red onion, cranberries, walnuts, and feta.

6. Pour the dressing over the salad and toss gently to coat everything evenly.

7. Let the salad rest for at least 10 minutes before serving to allow flavors to meld.

8. Serve chilled or at room temperature.

Notes

Use a salad spinner to dry broccoli thoroughly—wet florets can water down the dressing.

Swap the walnuts for pecans or sunflower seeds for a nut-free version.

Want a bolder flavor? Add a squeeze of lemon juice or a pinch of garlic powder to the dressing.
