Ingredients
1 ½ pounds boneless skinless chicken thighs
2 cups broccoli florets
1 red bell pepper, chopped
1 green bell pepper, chopped
1 carrot, thinly sliced
1 cup mushrooms, sliced
2 green onions, chopped
½ cup teriyaki sauce
1 teaspoon sesame oil
3 cups cooked wild rice
1 tablespoon sesame seeds
Instructions
1. Slice the chicken into bite-sized pieces. Chop all vegetables into even sizes for consistent cooking.
2. In a large skillet or wok, heat oil over medium-high heat. Cook the chicken for 5-6 minutes until browned and cooked through. Remove and set aside.
3. In the same skillet, stir-fry broccoli, bell peppers, carrots, and mushrooms for 4-5 minutes until tender-crisp.
4. Return the chicken to the skillet and pour in the teriyaki sauce. Stir to coat and simmer for 2-3 minutes until thickened.
5. Serve over warm wild rice. Drizzle with sesame oil, and garnish with sesame seeds and green onions.
Notes
Make sure the vegetables are dry before stir-frying to avoid excess moisture in the pan.
For added depth, toast the sesame seeds briefly in a dry pan before garnishing.
Use pre-cooked wild rice to save time and ensure quick assembly during weeknights.
