Description

These Delicious Lemon Gooey Butter Cookies are a citrus-lover’s dream: chewy, buttery, and bursting with bright lemon flavor. Coated in powdered sugar and baked to golden perfection, they’re easy to make and absolutely irresistible. Ideal for parties, gifting, or when you just need a sunshine-filled sweet.


Ingredients

1 package (8 oz) cream cheese, softened

1/2 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1 tablespoon lemon zest

2 tablespoons fresh lemon juice

1 box (15.25 oz) yellow cake mix

1/2 cup powdered sugar (for rolling)


Instructions

1. In a large bowl, beat the softened cream cheese and butter together until light and fluffy.

2. Add in the sugar, egg, lemon zest, and lemon juice. Mix until well combined.

3. Gradually add the yellow cake mix to the wet mixture and stir until a sticky dough forms.

4. Cover and refrigerate the dough for at least 1 hour.

5. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

6. Scoop tablespoons of dough and roll into balls. Coat each dough ball generously in powdered sugar.

7. Place cookies on the prepared baking sheet, spacing them 2 inches apart.

8. Bake for 10–12 minutes or until edges are set and tops are slightly cracked.

9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Chill the dough long enough—this helps with easy handling and prevents over-spreading during baking.

Don’t overbake. Pull them out when the edges are set but the centers still look soft.

Use fresh lemon zest and juice for the brightest, most vibrant lemon flavor.
