Description

These Delicious Empanadas are baked golden pockets of seasoned ground beef wrapped in a flaky crust. Perfect for gatherings, lunchboxes, or make-ahead meals. The filling is rich and savory, while the crust delivers a satisfying crunch with every bite.


Ingredients

1 pound ground beef

1 medium onion, chopped

2 cloves garlic, minced

1 tablespoon tomato paste

1 teaspoon paprika

1 teaspoon ground cumin

1 teaspoon salt

½ teaspoon black pepper

10 empanada dough discs or 2 puff pastry sheets

1 egg, beaten (for egg wash)


Instructions

1. In a skillet over medium heat, sauté the chopped onion and garlic until softened and fragrant.

2. Add the ground beef and cook until browned, breaking it apart with a spoon.

3. Stir in the tomato paste, paprika, cumin, salt, and pepper. Simmer the mixture for 5–7 minutes until slightly thickened. Let cool.

4. On a floured surface, roll out your dough discs or puff pastry sheets to about 5–6 inches in diameter.

5. Spoon 1–2 tablespoons of the beef filling onto each round. Fold into a half-moon and seal the edges tightly using a fork or empanada press.

6. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

7. Place the empanadas on the sheet and brush with the beaten egg for a glossy finish.

8. Bake for 22–25 minutes or until golden brown.

9. Cool slightly before serving. Enjoy warm!

Notes

For extra flaky crust, chill assembled empanadas for 10 minutes before baking.

Don’t overfill—1 to 2 tablespoons of filling is ideal for sealing properly.

To freeze, assemble but don’t bake. Store in an airtight container and bake directly from frozen, adding 5 minutes to the cook time.
