This rich and satisfying dish features pan-seared chicken in a creamy garlic Alfredo sauce, paired with buttery mushrooms and hot honey roasted baby potatoes. Perfect for cozy dinners, it’s a balanced plate of protein, comfort, and heat.
Ingredients
1.5 lbs chicken breast or thighs
1.5 lbs baby potatoes
2 cups cremini or button mushrooms, sliced
4 cloves garlic, minced
1.5 cups heavy cream
1 cup grated Parmesan cheese
3 tablespoons butter
2 tablespoons olive oil
2 tablespoons honey
1 teaspoon chili flakes
2 tablespoons fresh parsley, chopped
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1/2 teaspoon paprika
Instructions
1. Preheat oven to 425°F (220°C). Toss halved baby potatoes with olive oil, salt, pepper, garlic powder, and chili flakes. Spread on a baking sheet and roast 25–30 minutes until crispy. Drizzle with honey in the last 5 minutes and toss.
2. Season chicken with salt, pepper, and paprika. In a hot skillet with olive oil, sear chicken on both sides until golden and cooked through. Remove and set aside.
3. In the same skillet, melt butter and sauté mushrooms with a pinch of salt until browned and tender. Remove and set aside.
4. Lower heat to medium, add butter and garlic to the pan. Once fragrant, pour in cream and bring to a light simmer. Stir in Parmesan until melted and creamy.
5. Return chicken and mushrooms to the pan, coat with sauce, and cook for 2–3 minutes. Garnish with parsley.
6. Serve chicken and mushrooms with hot honey potatoes. Spoon over extra sauce and enjoy.
Notes
Use freshly grated Parmesan for best meltability in the sauce.
Don’t overcrowd the potatoes on the baking sheet—this keeps them crispy.
For extra sauce, double the cream and Parmesan to ensure coverage.
