Ingredients
3 heads garlic, whole
1 medium yellow onion, sliced
2 medium potatoes, peeled and diced
4 cups chicken broth (or vegetable broth for vegan)
1 tablespoon fresh thyme leaves
2 tablespoons olive oil
Salt, to taste
Black pepper, to taste
1 tablespoon chopped fresh chives or parsley (for garnish)
Instructions
1. Preheat oven to 375°F. Slice the tops off garlic heads, drizzle with olive oil, wrap in foil, and roast for 35–40 minutes until golden and soft.
2. In a soup pot, heat olive oil over medium. Add sliced onions with a pinch of salt. Sauté until translucent and lightly caramelized.
3. Add diced potatoes and broth. Bring to a boil, then reduce to simmer for 20 minutes or until potatoes are fork-tender.
4. Squeeze roasted garlic into the pot. Add fresh thyme and simmer 5 more minutes.
5. Blend soup using an immersion blender or regular blender (in batches) until creamy.
6. Season with salt and black pepper. Serve hot, topped with chives or parsley and crusty bread.
Notes
For a richer version, stir in ¼ cup of heavy cream or crème fraîche just before serving.
Use Yukon Gold potatoes for the creamiest texture without needing dairy.
Always blend in batches if using a standard blender to avoid splatters from the hot liquid.
