This Delicious Char Siu Chicken brings Chinese BBQ flavors into your kitchen, with glossy caramelized skin and juicy meat marinated in soy, hoisin, honey, and five spice. Oven-roasted for deep char and finished under the broiler, it’s a crowd-pleasing dish perfect with rice, noodles, or tucked into bao buns.
Ingredients
2 pounds boneless chicken thighs
3 tablespoons soy sauce
2 tablespoons hoisin sauce
2 tablespoons honey
1 tablespoon Chinese five spice powder
1 tablespoon oyster sauce
1 tablespoon Shaoxing wine or dry sherry
2 cloves garlic, minced
2 to 3 drops red food coloring (optional)
Instructions
1. In a mixing bowl, combine soy sauce, hoisin sauce, honey, five spice, oyster sauce, wine, garlic, and optional food coloring.
2. Place chicken thighs in a ziplock bag or container. Pour marinade over and mix to coat. Seal and refrigerate at least 4 hours or overnight.
3. Preheat oven to 400°F (200°C). Line a baking tray with foil and set a greased wire rack on top.
4. Arrange marinated chicken on the rack. Roast for 20 minutes. Flip and baste with marinade, then roast another 15–20 minutes.
5. Baste once more, then broil for 2–3 minutes until charred at the edges. Watch closely.
6. Let rest for 5 minutes. Slice and serve with rice, noodles, or in bao buns.
Notes
For best color and flavor, broil the chicken during the last 2–3 minutes — it caramelizes the sauce beautifully.
Don’t skip the resting time — it lets juices redistribute for juicier slices.
This marinade works great on pork tenderloin or tofu as a vegetarian option.
