Ingredients

1 lb (450g) beef stew meat, cut into bite-sized pieces

2 tbsp olive oil

1 small onion, chopped

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes

1 can (15 oz) tomato sauce

1 tsp dried oregano

1 tsp dried basil

½ tsp red pepper flakes (optional)

1½ cups beef broth

2 cups uncooked bowtie pasta

Salt and black pepper, to taste

¼ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)


Instructions

  1. Sear the Beef: Heat olive oil in a skillet over medium-high heat. Season beef with salt and black pepper, then sear until browned on all sides. Remove and set aside.
  2. Sauté the Aromatics: In the same skillet, cook the chopped onion until softened. Add minced garlic and cook for another 30 seconds.
  3. Build the Sauce: Add diced tomatoes, tomato sauce, beef broth, oregano, basil, and red pepper flakes. Stir to combine, scraping the bottom of the pan.
  4. Simmer the Beef: Return the seared beef to the skillet, cover, and let it simmer on low for 45-60 minutes until tender. Add water or broth if needed.
  5. Cook the Pasta: While the beef is simmering, cook the bowtie pasta in salted boiling water until al dente. Drain and set aside.
  6. Combine Everything: Add the cooked pasta into the sauce, stirring well to coat. Let it cook for another 2-3 minutes.
  7. Serve and Garnish: Remove from heat, stir in Parmesan cheese, and garnish with fresh parsley. Serve warm and enjoy!
