Ingredients
250 g kunafa dough (kataifi pastry)
150 g unsalted butter, melted
1 cup pistachios, finely ground (plus extra for garnish)
1 cup heavy cream
250 g mascarpone or cream cheese
1/2 cup powdered sugar
150 g dark chocolate
1/2 cup sugar syrup (simple syrup, with optional rose or orange blossom water)
Instructions
- 1. Preheat the oven to 180°C (350°F).
- Mix shredded kunafa dough with melted butter.
- Press half into a buttered springform pan; bake until lightly golden.
- Whip heavy cream, mascarpone, and powdered sugar until fluffy.
- Fold in ground pistachios, keeping some for garnish.
- Spread pistachio cream over baked kunafa base.
- Top with remaining kunafa dough; press gently; bake until golden.
- Drizzle warm sugar syrup evenly over kunafa.
- Melt dark chocolate with cream for ganache; pour over cooled kunafa.
- Smooth with offset spatula; sprinkle with extra pistachios and rose petals.
