Decadent Caramel Banana Pecan Cake

Description

A rich and indulgent banana cake layered with homemade caramel sauce, topped with fresh banana slices and crunchy pecans. The perfect balance of gooey, sweet, and nutty flavors.


Ingredients

3 ripe bananas (mashed)

2 cups all-purpose flour

1 cup brown sugar

1/2 cup softened butter (plus 1/2 cup for caramel)

2 eggs

1 tsp vanilla extract

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 cup brown sugar (for caramel)

1/2 cup heavy cream (for caramel)

Whole or halved pecans (for topping)

Fresh banana slices (for topping)


Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, mash bananas and mix with 1 cup brown sugar and 1/2 cup butter until creamy.
  3. Add eggs and vanilla extract, and mix well.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  5. Gradually combine dry ingredients with the wet banana mixture.
  6. Divide batter into pans and bake for 25-30 minutes. Cool completely.
  7. For caramel: Melt 1/2 cup butter, add 1 cup brown sugar, and stir. Add 1/2 cup heavy cream and simmer 5-7 minutes. Cool slightly.
  8. Assemble: Spread caramel between cooled cake layers and over top.
  9. Decorate with banana slices and pecans. Drizzle more caramel as desired.
