Ingredients
1 sheet puff pastry (thawed)
4 oz cream cheese (softened)
3 tablespoons granulated sugar
1 teaspoon vanilla extract
1 cup blueberries (fresh or frozen)
1 tablespoon lemon juice
1 teaspoon cornstarch
1 egg (beaten, for egg wash)
Instructions
1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. Cut the puff pastry into 4 rectangles and place them spaced apart on the baking sheet.
3. In a bowl, beat together cream cheese, sugar, and vanilla extract until smooth.
4. Spoon the cream cheese mixture into the center of each pastry, leaving a border.
5. In a saucepan, simmer blueberries, lemon juice, and cornstarch until thick and glossy. Let cool.
6. Top the cream cheese layer with the blueberry mixture.
7. Brush the edges of the pastries with the beaten egg.
8. Bake for 15–18 minutes until golden brown and puffed.
9. Cool slightly on a wire rack before serving.
Notes
Make sure the puff pastry is fully thawed but still cold for best rise and flakiness.
Don’t overload the blueberry topping—it may spill during baking.
You can prepare the cream cheese and blueberry filling a day ahead to save time.
