Description

These Dairy-Free Gluten-Free Dinner Rolls are golden and soft, with a fluffy interior and satisfying chew—all without any dairy or gluten. Perfect for inclusive holiday meals or weeknight dinners, these rolls rise beautifully and bake up like classic comfort food, but allergy-friendly.


Ingredients

1 ½ cups gluten-free all-purpose flour (with xanthan gum if not included)

½ cup tapioca starch

2 ¼ teaspoons instant yeast

1 tablespoon sugar

¾ teaspoon salt

1 cup warm dairy-free milk (like almond or oat)

1 tablespoon apple cider vinegar

3 tablespoons olive oil or neutral oil

2 tablespoons melted dairy-free butter (for brushing)


Instructions

1. In a small bowl, combine warm dairy-free milk (around 110°F), sugar, and instant yeast. Let sit for 5–10 minutes until foamy.

2. In a large bowl, whisk together gluten-free flour, tapioca starch, and salt until evenly combined.

3. Add yeast mixture, apple cider vinegar, and oil to the dry mix. Beat using a stand mixer with dough hook (or hand mixer with paddle) until dough is smooth and slightly sticky.

4. Cover the bowl and let the dough rise in a warm, draft-free spot for 60 minutes until nearly doubled.

5. Lightly oil your hands and divide dough into 12 portions. Shape into smooth balls and place in a greased 9×13-inch baking dish.

6. Cover and allow rolls to rise again for 30 minutes. They should puff and just touch.

7. Bake at 375°F (190°C) for 22–25 minutes or until tops are golden brown.

8. Brush with melted dairy-free butter immediately after baking. Serve warm or cool completely for storage.
