Crockpot Pot Roast Sliders are the ultimate comfort food made easy. Juicy, shredded chuck roast is slow-cooked in savory broth, infused with ranch, au jus, and pepperoncini, then served hot on soft slider buns with melted provolone. Perfect for gatherings, meal prep, or any day that calls for a cozy, hearty bite.
Ingredients
3–4 pounds chuck roast
1 cup beef broth
1 packet ranch seasoning mix
1 packet au jus gravy mix
6 to 8 pepperoncini peppers
1/2 cup unsalted butter
12 slider buns (Hawaiian rolls recommended)
6 to 8 slices provolone cheese
Instructions
1. Place the chuck roast in the crockpot.
2. Pour beef broth over the roast and sprinkle ranch seasoning and au jus mix evenly on top.
3. Add pepperoncini peppers over and around the roast.
4. Place pats of butter directly on top of the meat.
5. Cover and cook on low for 8 hours or high for 4–5 hours until meat is fall-apart tender.
6. Shred the beef using two forks and let it soak in the juices for 15 minutes.
7. Slice the buns and layer the shredded beef onto the bottom half.
8. Add provolone cheese, top with the other half of buns.
9. Optional: bake at 350°F for 5 minutes until cheese melts and buns are slightly toasted.
Notes
For best texture, toast the bun bottoms before adding the filling to prevent sogginess.
You can double the recipe easily for a party tray—just use a larger crockpot.
Store leftover shredded beef separately in juices to maintain flavor and moisture.
