Ingredients
1 ½ lbs ground beef (80/20)
1 cup breadcrumbs
2 large eggs
½ cup milk
1 small yellow onion, finely chopped
2 cloves garlic, minced
1 tablespoon Worcestershire sauce
½ cup ketchup (divided)
2 tablespoons brown sugar
1 teaspoon salt
½ teaspoon black pepper
Instructions
1. Line the base of your slow cooker with foil or parchment paper. This helps with easy removal and clean-up.
2. In a large mixing bowl, combine ground beef, breadcrumbs, eggs, milk, onion, garlic, Worcestershire sauce, half the ketchup, salt, and pepper. Mix until just combined—do not overwork the mixture.
3. Shape into a loaf and place in the lined slow cooker.
4. Mix remaining ketchup with brown sugar and spread half over the top of the loaf.
5. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until internal temperature reaches 160°F.
6. In the last 15 minutes, brush the remaining glaze on top.
7. Let rest for 10 minutes before slicing.
Notes
Avoid overmixing the meat mixture to prevent a dense or tough meatloaf.
If using ground turkey or chicken, add 1 tablespoon of olive oil for moisture.
Letting the meatloaf rest before slicing ensures cleaner cuts and better flavor.
