Ingredients
2 boneless, skinless chicken breasts
8 oz spaghetti noodles
1 can (10.5 oz) cream of chicken soup
1 block (16 oz) Velveeta cheese, cubed
1 cup chicken broth
1 can (10 oz) diced tomatoes with green chilies (like Rotel)
1 tsp onion powder
1 tsp garlic powder
Salt and pepper to taste
Optional: shredded cheddar cheese and fresh parsley for garnish
Instructions
- Place chicken breasts, cream of chicken soup, chicken broth, diced tomatoes with green chilies, onion powder, garlic powder, salt, and pepper into the crockpot.
- Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until chicken is fully cooked and tender.
- Remove chicken, shred with forks, then return to the crockpot and stir.
- Add cubed Velveeta cheese and stir until melted and fully incorporated.
- Cook spaghetti noodles separately, drain, and add to crockpot. Stir to combine.
- Garnish with shredded cheddar or parsley if desired. Serve warm.
