Description

A creamy and indulgent comfort food classic, this Crockpot Cheesy Chicken Spaghetti combines tender shredded chicken with a rich cheese sauce and spaghetti noodles for a dish the whole family will love. Perfect for easy weeknight meals or make-ahead dinners.


Ingredients

2 boneless, skinless chicken breasts

8 oz spaghetti noodles

1 can (10.5 oz) cream of chicken soup

1 block (16 oz) Velveeta cheese, cubed

1 cup chicken broth

1 can (10 oz) diced tomatoes with green chilies (like Rotel)

1 tsp onion powder

1 tsp garlic powder

Salt and pepper to taste

Optional: shredded cheddar cheese and fresh parsley for garnish


Instructions

  1. Place chicken breasts, cream of chicken soup, chicken broth, diced tomatoes with green chilies, onion powder, garlic powder, salt, and pepper into the crockpot.
  2. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until chicken is fully cooked and tender.
  3. Remove chicken, shred with forks, then return to the crockpot and stir.
  4. Add cubed Velveeta cheese and stir until melted and fully incorporated.
  5. Cook spaghetti noodles separately, drain, and add to crockpot. Stir to combine.
  6. Garnish with shredded cheddar or parsley if desired. Serve warm.
