This Crockpot Cabbage Roll Casserole is the kind of easy dinner that tastes like pure comfort with very little hands-on work. Ingredients
1 pound ground beef
1 small green cabbage, chopped
1 small onion, diced
3 cloves garlic, minced
1 cup uncooked white rice
1 can crushed tomatoes, 28 ounces
1 can tomato sauce, 15 ounces
2 cups beef broth
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce
1 teaspoon paprika
1 teaspoon Italian seasoning
1 1/2 teaspoons salt
1/2 teaspoon black pepper
1/2 cup sour cream, for serving
2 tablespoons fresh parsley, chopped, for serving
Instructions
1. In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is soft. Add the garlic and cook for 1 minute more. Drain excess grease.
2. In a bowl, stir together the crushed tomatoes, tomato sauce, beef broth, brown sugar, Worcestershire sauce, paprika, Italian seasoning, salt, and black pepper.
3. Add a layer of chopped cabbage to the crockpot. Top with part of the beef mixture, part of the uncooked rice, and part of the sauce. Repeat until all ingredients are used, ending with sauce on top.
4. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the cabbage is tender and the rice is fully cooked.
5. Let the casserole rest for 10 minutes before serving. Spoon into bowls and top with sour cream and fresh parsley.
Notes
Browning the beef before adding it to the crockpot gives the casserole a deeper, richer flavor.
Chop the cabbage into even bite-sized pieces so it cooks at the same rate and stays tender.
Letting the casserole rest before serving helps the rice absorb extra liquid and improves the texture.
