Ingredients
3–4 boneless, skinless chicken breasts or thighs
6 cups chicken broth
4 cloves garlic, minced
1 tablespoon Italian seasoning
1 cup heavy cream
1 1/2 cups freshly grated Parmesan cheese
Fresh parsley for garnish
Instructions
- Place the chicken breasts or thighs into the slow cooker.
- Pour in the chicken broth, then add the garlic and Italian seasoning.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Once the chicken is cooked, remove it from the slow cooker and shred it using two forks.
- Return the shredded chicken to the soup, then stir in the heavy cream and Parmesan cheese.
- Stir until the cheese has melted and the soup is creamy and smooth.
