Description

This Crispy Strawberry Cheesecake Sandwich brings together the richness of cheesecake, the brightness of fresh strawberries, and the satisfying crunch of buttery graham crumbs. It’s a no-bake layered dessert that slices clean and tastes like summer in every bite.


Ingredients

2 cups graham cracker crumbs

10 tablespoons unsalted butter, melted

16 ounces cream cheese, softened

1 cup powdered sugar

2 teaspoons vanilla extract

1 cup heavy whipping cream

2 cups fresh strawberries, sliced

1⁄3 cup strawberry jam or compote


Instructions

1. Combine graham cracker crumbs with melted butter until fully moistened.

2. Press half the crumb mixture firmly into a parchment-lined 9×13-inch dish to form the base. Chill for 15 minutes.

3. In a large bowl, beat the cream cheese until smooth. Add powdered sugar and vanilla, and mix until creamy.

4. Whip the heavy cream in a separate bowl until stiff peaks form. Fold it into the cream cheese mixture to create a light cheesecake filling.

5. Mix sliced strawberries with strawberry jam or compote until evenly coated.

6. Spread the cheesecake filling over the chilled crust layer.

7. Spoon the strawberry mixture evenly over the cheesecake layer.

8. Top with the remaining crumb mixture, pressing lightly to set the top crust.

9. Cover and chill for at least 4 hours or overnight.

10. Slice into squares or bars and serve cold.

Notes

For clean layers, chill overnight before slicing.

Always use room temperature cream cheese for a smooth filling.

Fresh strawberries give better texture, but well-drained frozen berries can work too.
