Ingredients

4 boneless, skinless chicken breasts

1 sleeve Ritz crackers (about 30 crackers), crushed

1 cup shredded cheddar cheese

2 large eggs

2 tablespoons milk

4 tablespoons butter, melted

Fresh parsley for garnish (optional)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Pound the chicken breasts to an even thickness using a meat mallet.
  3. In a shallow bowl, whisk together eggs and milk.
  4. In another bowl, combine crushed Ritz crackers and shredded cheddar.
  5. Dip each chicken breast into the egg mixture, then coat thoroughly with the cracker-cheese mixture.
  6. Place coated chicken in a greased baking dish and drizzle with melted butter.
  7. Bake for 30-35 minutes, until the chicken is cooked through and the top is golden brown.
