Description

This Crispy Parmesan Chopped Salad is a fresh, crunchy, easy recipe packed with crisp romaine, juicy tomatoes, cucumber, red onion, crunchy croutons, and savory Parmesan. Ingredients

4 cups chopped romaine lettuce

1 cup halved cherry tomatoes

1 cup diced cucumber

1/4 cup thinly sliced red onion

1/2 cup grated Parmesan cheese

1 cup croutons

3 tablespoons olive oil

1 1/2 tablespoons lemon juice

1 teaspoon Dijon mustard

1 garlic clove, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup grilled chicken, optional


Instructions

1. Wash and dry the romaine well, then chop it into bite sized pieces.

2. Halve the cherry tomatoes, dice the cucumber, and thinly slice the red onion.

3. In a small bowl or jar, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, salt, and black pepper until smooth.

4. Add the romaine, cherry tomatoes, cucumber, and red onion to a large salad bowl.

5. Add the Parmesan cheese and toss lightly to distribute the ingredients.

6. Pour the dressing over the salad and toss gently until everything is evenly coated.

7. Fold in the croutons just before serving so they stay crisp.

8. Top with extra Parmesan if desired and serve immediately.

9. Add grilled chicken on top if you want to turn it into a full meal.

Notes

Dry the romaine thoroughly so the dressing sticks well and the salad stays crisp.

Add the croutons at the very end to keep their crunch.
