Ingredients
1 pound ground beef
4 cups potatoes, diced small
1 tablespoon olive oil
1 medium onion, diced
1 bell pepper, diced
3 cloves garlic, minced
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes
2 green onions, sliced
Instructions
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the diced potatoes and cook for 10 to 12 minutes, stirring occasionally, until they begin to turn golden and tender.
3. Add the ground beef to the skillet and break it apart with a spoon.
4. Cook the beef until browned and no longer pink.
5. Stir in the onion and bell pepper and cook for 3 to 4 minutes until softened.
6. Add the garlic, paprika, salt, black pepper, and crushed red pepper flakes.
7. Stir everything together and cook for another 5 to 7 minutes until the potatoes are crispy on the edges and the beef is deeply browned.
8. Top with sliced green onions and serve hot.
Notes
Use a large skillet so the potatoes have room to crisp instead of steaming.
Cut the potatoes into even small cubes for faster and more even cooking.
For the best texture, reheat leftovers in a skillet instead of the microwave.
