Description

Golden, crispy-edged corn fritters made with sweet summer corn, sharp scallions, and cheddar cheese. These quick-fry bites are perfect as a summer snack, brunch side, or light lunch, topped with sour cream or hot honey.


Ingredients

1 cup fresh or frozen corn kernels

1/2 cup all-purpose flour

1/4 cup cornmeal

2 large eggs

1/4 cup milk

1/2 cup shredded cheddar cheese

2 scallions, finely chopped

1 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons butter or oil (for frying)


Instructions

1. In a large bowl, whisk together flour, cornmeal, baking powder, salt, and pepper.

2. Add eggs and milk to the dry mixture and stir just until combined.

3. Fold in corn, scallions, and cheddar cheese. Batter should be thick.

4. Heat a skillet over medium heat and add butter or oil until shimmering.

5. Drop 1/4 cup scoops of batter onto the skillet and flatten gently.

6. Cook 3 to 4 minutes per side until golden and crispy.

7. Remove to a paper towel-lined plate and drain.

8. Serve warm with sour cream, Greek yogurt, or hot honey drizzle.

Notes

For maximum crispiness, use a cast iron skillet and don’t overcrowd the pan.

Thaw and pat dry frozen corn to avoid soggy batter.

For spicy flair, mix chopped jalapeños or a pinch of cayenne into the batter.
