Description

Juicy, tender chicken with a golden, crunchy crust – this crispy country fried chicken is a nostalgic Southern favorite, marinated in buttermilk and fried to perfection. Serve it hot with your favorite sides!


Ingredients

4 chicken thighs or breasts

2 cups buttermilk

2 cups all-purpose flour

0.5 cup cornstarch

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

0.25 teaspoon cayenne pepper (optional)

2 eggs

4 cups peanut or vegetable oil (for frying)

1 teaspoon salt

0.5 teaspoon black pepper


Instructions

1. Marinate the chicken in buttermilk, salt, and pepper for at least 1 hour or overnight.

2. Mix flour, cornstarch, paprika, garlic powder, onion powder, cayenne, salt, and pepper in a bowl.

3. Beat the eggs in another bowl.

4. Dredge chicken: flour mix -> egg -> flour mix again. Shake off excess.

5. Heat oil to 350°F (175°C). Fry chicken 6-8 minutes per side until golden and 165°F (74°C) inside.

6. Drain on a wire rack and rest 5 minutes before serving.
