Ingredients
2 cups mashed potatoes
1 cup cheddar cheese, shredded
¼ cup Parmesan cheese, grated
1 egg
2 tablespoons all-purpose flour
2 tablespoons butter, melted
2 tablespoons chives or green onions, chopped
½ teaspoon salt
¼ teaspoon pepper
Instructions
1. Mash the potatoes until smooth.
2. Stir in cheddar, Parmesan, egg, flour, melted butter, chives, salt, and pepper. Mix until combined.
3. Scoop small portions into greased mini muffin tin or on lined baking sheet.
4. Bake at 400°F (200°C) for 20-25 minutes until golden and crisp.
5. Garnish with extra chives and Parmesan before serving.
Notes
For extra crispness, sprinkle a little Parmesan on top before baking.
Use a silicone mold or parchment to prevent sticking.
Add a pinch of smoked paprika or garlic powder for extra flavor.
