Ingredients
1 large head cauliflower, cut into florets
2 tablespoons olive oil
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon salt
½ teaspoon black pepper
1 tablespoon chopped fresh parsley (optional)
¼ cup mayonnaise
¼ cup Greek yogurt
1 clove garlic, grated
1 tablespoon lemon juice
1 tablespoon chopped parsley
¼ teaspoon salt
⅛ teaspoon black pepper
Instructions
1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. Place the cauliflower florets in a large bowl. Drizzle with olive oil and toss with paprika, garlic powder, salt, and pepper until evenly coated.
3. Arrange the florets on the baking sheet in a single layer, leaving space between each one.
4. Roast for 25 to 30 minutes, flipping halfway through, until golden brown and crispy on the edges.
5. While the cauliflower bakes, make the garlic sauce: combine mayonnaise, Greek yogurt, grated garlic, lemon juice, parsley, salt, and pepper in a small bowl or blender. Mix until smooth and creamy.
6. Serve the crispy cauliflower warm with garlic sauce on the side. Garnish with parsley if desired.
Notes
Dry cauliflower thoroughly before seasoning to ensure maximum crispiness.
