Description

Crispy Air Fryer Zucchini Fritters are a healthy, delicious way to use up fresh zucchini. These golden patties have a tender interior with crispy edges, made without deep frying. They’re quick to prep, air-fried to perfection, and perfect with dips or as a side.


Ingredients

2 medium zucchinis, shredded

2 large eggs

1/3 cup all-purpose flour

1/3 cup grated Parmesan cheese

2 green onions, finely chopped

2 cloves garlic, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon baking powder

Olive oil spray


Instructions

1. Shred the zucchini using a box grater or food processor. Place in a clean towel and squeeze out as much moisture as possible.

2. In a large mixing bowl, combine the drained zucchini, eggs, flour, Parmesan cheese, green onions, garlic, salt, pepper, and baking powder. Stir until fully combined.

3. Preheat your air fryer to 375°F (190°C). Lightly grease the basket with olive oil spray or line it with parchment.

4. Scoop heaping tablespoons of the mixture and form into small, flat patties. Place them into the air fryer basket without overcrowding.

5. Spray the tops with olive oil. Cook for 10–12 minutes, flipping halfway through and spraying again. Fritters should be golden and crisp.

6. Let rest a few minutes before serving. Pair with sour cream, yogurt dip, or tzatziki for extra flavor.

Notes

Don’t skip draining the zucchini – excess water leads to soggy fritters. Squeeze well.

Flip gently in the air fryer – it ensures even crisping without breaking the patties.

Add your twist – fresh herbs like dill or parsley give a flavor lift and color.
