Description

This Creamy White Chicken Chili with Cream Cheese Delight is the ultimate comfort food, combining shredded chicken, white beans, and sweet corn in a luxuriously smooth cream cheese broth. It’s an easy, cozy dinner that reheats beautifully—perfect for meal prep or a comforting weeknight meal.

Ingredients

3 cups cooked shredded chicken

2 cans (15 oz each) white beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 package (8 oz) cream cheese

4 cups chicken broth

1 can (4 oz) green chiles

1 small onion, chopped

2 cloves garlic, minced

1 teaspoon cumin

1 teaspoon dried oregano

1 teaspoon chili powder

1 teaspoon salt

½ teaspoon black pepper

Optional toppings: diced avocado, shredded cheese, cilantro, lime wedges

Instructions

1. In a Dutch oven, heat a tablespoon of oil over medium heat. Sauté the chopped onion and garlic until fragrant and translucent.

2. Add the shredded chicken, white beans, corn, green chiles, and chicken broth. Stir to combine.

3. Sprinkle in cumin, oregano, chili powder, salt, and pepper. Let the mixture simmer for 10 minutes to let flavors meld.

4. Reduce heat to low and stir in the cream cheese. Continue stirring until fully melted and the chili turns creamy.

5. Taste and adjust seasonings. Serve hot with your choice of toppings such as avocado, cilantro, shredded cheese, or lime juice.

Notes

To make it spicier, add a diced jalapeño or extra chili powder while simmering.

Use rotisserie chicken to save time and boost flavor effortlessly.

If reheating from frozen, thaw in the fridge overnight and reheat slowly over low heat while stirring to maintain creaminess.
