Description

Creamy Tuscan Chicken is a rich and comforting skillet dish featuring pan-seared chicken breasts in a garlic Parmesan cream sauce with sun-dried tomatoes and spinach. Perfect over pasta or mashed potatoes for a cozy dinner.


Ingredients

4 boneless, skinless chicken breasts

2 tablespoons olive oil

2 tablespoons butter (divided)

Salt and black pepper to taste

1 teaspoon Italian seasoning

3 cloves garlic, minced

1/2 cup sun-dried tomatoes, chopped

3/4 cup chicken broth

1 cup heavy cream

1/2 cup grated Parmesan cheese

2 cups fresh spinach


Instructions

  1. Season chicken breasts with salt, pepper, and Italian seasoning.
  2. In a large skillet, heat olive oil and 1 tablespoon butter over medium heat. Sear chicken 5-7 minutes per side until golden and cooked through. Remove and set aside.
  3. Add remaining butter and garlic to the skillet. Sauté for 30 seconds.
  4. Stir in sun-dried tomatoes and cook for another minute.
  5. Deglaze the pan with chicken broth, scraping up browned bits.
  6. Add heavy cream and Parmesan. Simmer until sauce thickens.
  7. Stir in spinach and cook until wilted.
  8. Return chicken to skillet and simmer 5 minutes, spooning sauce over top.
