Ingredients
4 boneless, skinless chicken breasts
2 tablespoons olive oil
2 tablespoons butter (divided)
Salt and black pepper to taste
1 teaspoon Italian seasoning
3 cloves garlic, minced
1/2 cup sun-dried tomatoes, chopped
3/4 cup chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 cups fresh spinach
Instructions
- Season chicken breasts with salt, pepper, and Italian seasoning.
- In a large skillet, heat olive oil and 1 tablespoon butter over medium heat. Sear chicken 5-7 minutes per side until golden and cooked through. Remove and set aside.
- Add remaining butter and garlic to the skillet. Sauté for 30 seconds.
- Stir in sun-dried tomatoes and cook for another minute.
- Deglaze the pan with chicken broth, scraping up browned bits.
- Add heavy cream and Parmesan. Simmer until sauce thickens.
- Stir in spinach and cook until wilted.
- Return chicken to skillet and simmer 5 minutes, spooning sauce over top.
