Description

Creamy Tuscan Chicken Pasta is a rich and satisfying dish that brings together tender seared chicken, sun-dried tomatoes, fresh spinach, and fettuccine pasta all coated in a velvety Parmesan cream sauce. It’s comforting, elegant, and perfect for both weeknight dinners and special occasions.


Ingredients

2 boneless, skinless chicken breasts

8 oz fettuccine pasta

1/2 cup sun-dried tomatoes (chopped)

2 cups fresh spinach

1 1/2 cups heavy cream

3/4 cup grated Parmesan cheese

3 cloves garlic (minced)

1 tsp Italian seasoning

Salt and black pepper to taste

2 tbsp olive oil

2 tbsp butter


Instructions

  1. Season the chicken breasts with salt, pepper, and Italian seasoning.
  2. Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat. Sear the chicken for 5–6 minutes per side until golden and cooked through. Remove and slice.
  3. In the same skillet, add the remaining butter. Sauté garlic for 30 seconds.
  4. Add the sun-dried tomatoes and cook for 1–2 minutes.
  5. Pour in the heavy cream and bring to a simmer.
  6. Stir in the Parmesan cheese until fully melted and the sauce thickens.
  7. Add the spinach and cook until wilted.
  8. Return the sliced chicken and cooked pasta to the skillet. Toss everything to coat evenly.
  9. Simmer for 2–3 minutes more. Serve hot with extra Parmesan and sun-dried tomato garnish.
