Ingredients
2 boneless, skinless chicken breasts
8 oz fettuccine pasta
1/2 cup sun-dried tomatoes (chopped)
2 cups fresh spinach
1 1/2 cups heavy cream
3/4 cup grated Parmesan cheese
3 cloves garlic (minced)
1 tsp Italian seasoning
Salt and black pepper to taste
2 tbsp olive oil
2 tbsp butter
Instructions
- Season the chicken breasts with salt, pepper, and Italian seasoning.
- Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat. Sear the chicken for 5–6 minutes per side until golden and cooked through. Remove and slice.
- In the same skillet, add the remaining butter. Sauté garlic for 30 seconds.
- Add the sun-dried tomatoes and cook for 1–2 minutes.
- Pour in the heavy cream and bring to a simmer.
- Stir in the Parmesan cheese until fully melted and the sauce thickens.
- Add the spinach and cook until wilted.
- Return the sliced chicken and cooked pasta to the skillet. Toss everything to coat evenly.
- Simmer for 2–3 minutes more. Serve hot with extra Parmesan and sun-dried tomato garnish.
